Here at Corrib Deli our team are delighted to give you a recipe for one of our favorite dishes. There is nothing better  than Bacon and Cabbage especially on St Patrick’s Day.

What you need to prepare this at  home :

• 2 Lb joint of bacon (check how many you are cooking for but this should serve 4)
• Medium-Sized Cabbage making sure it is on good condition and fresh
• Mustard or HP steak sauce depending on your preference

Cooking Method

Remove packing from the joint and rinse in cold water.
Place the joint in a pot, Cover with cold water a bring to the boil.
Remove the scum that floats to the surface.
Cover and simmer for 1 hour (30 minutes per pound).
Cut cabbage into quarters and add to pot. cook gently for about 1/2 hour, or until cabbage is cooked to your liking. (Test constantly: don’t overdo it) .
We recommend serving straight away for the best taste.
You can serve with roast or new boiled potatoes.
Many people enjoy HP sauce or mustard to accompany the meat but that is your choice.
