The Job:
The role will involve travel to all Corrib sites and will primarily be concentrated on the Corrib Deli/Food to go business.
Responsibilities:
- Food Preparation of breakfast, lunch and evening meals. involving training of prepack serve over foods, scales use portion control. This is a critical element of the position.
- Training all deli staff to adhere to Hygiene policies, such as hand washing, jewellery, gloves, and personal hygiene.
- Food displays targeting Breakfast Lunch and evening. Training on Displays
- Training on Equipment use, Slicer Ovens fryers, pressure fryer Turbo Chef, knife use.
- Training on Cleaning of all equipment and deli in general
- Completion of deli assistant training and competencies record
- Training and use of Kelsius on site use ensuring HACCP compliance, such as cold and hot temps’ goods inward cleaning etc.
- Assist in cooking training where required.
- Ensuring great customer service
- Ensuring all new staff are training and integrated in a manner to help staff retention.
- Liaise with Area managers on any staff issues and staff training requirements.
- Liaise with Deli managers on any training requirements.
- Act as relief chef back up where required.
In Summary, the Relief Cook/trainer will ensure staff are fully trained in all deli sections and ensure that all new recruits are trained fully commensurate with their job activities. The job involves a large amount of operation training to ensure their safety and the safety of others. The position involves a high level of organisation in planning, communication and coordination with area managers.
The Relief Cook/trainer will directly report to their Fresh Food area manager The Relief Cook/trainer will attend the monthly Fresh Food meetings and are expected to contribute to the meetings by bringing issues and ideas to develop the business as a whole.
Key requirements:
- Professional qualification in Cookery/Culinary Arts is a distinct advantage.
- Experience within a Contract Catering or Deli environment is preferable.
- Must be available to work flexible hours Monday to Sunday across various locations.
- Train the Trainer Certified
